Since 1898, four generations have left their fingerprint in the history and tradition that today proudly shows Jesus Diaz Winery.
The traditional method of wine elaboration that has been preserved in its essence, has been also complemented with the new technologies, such as the fermentation in cold and the incorporation of modern facilities such as the isotherm deposits or the bottling works.
The results of their good wine doing are the exquisite wines that are produced, all of them winners of divers awards. From the culturing of 20 Has. of vineyards together with what they buy, Jesus Diaz young wines are elaborated.
The Rose wine is elaborated from the first must of the stained (red) grape. The white wine is a yolk wine, of the first must of the Malvar grape.
The 98 crop, was the first Tempranillo that was put in barrels to elaborate the Crianza with the trade name Heredad Torrezano. But it is necessary to emphasize as an original and ambitious bet, the cave where the great quality Sparkling wines they elaborate with authentic devotion, rest for a minimum of three years.
The building on which Jesus Diaz winery is currently located is part of the Franciscans´ Convent constructed in the XVth century under San Bernardinos´ dedication.
The Vineyard Jesus Diaz Winery elaborates its wines from grapes that proceed of 20 Has. of vineyards owned by the family, and of 30 Has. of hired vineyards all of them in the area of Colmenar de Oreja The Winery In the winery we continue to use 17 traditional earthenware jars made in Colmenar de Oreja and bought by D. Florentino Mingo, though re-dressed internally with resin and fibreglass. Also the use of 17 concrete deposits placed in its day by D. Jesus Diaz.
Besides we have 5 isotherm deposits for cold treatments, filters, refrigeration plates for fermentation control both in vessels and concrete deposits, line of bottling with a 1200/hr bottle capacity, line for sparkling wine production and 120 barrels of oak. (100 of American wood and 20 of French wood) |
